Mince meat for pies

Take one quart of meat the same of suet two quarts of apples, one quart of raisins (or ? fruit) one pound and a half of sugar, one pint officers (?) brandy, and so much wine (if necessary) as will make it wet enough to make it into balls, one table spoon of pulverized cinnamon, and one of nutmeg, pack it compactly in your jar and include the air as much as possible. N.B. For the meat, take any part of the beef which would make good steak and boil it well, chop it very fine and use it above, the suet in the raw state should be chopped very fine as well as the apples when baking if not moist enough add sugar and water or good cider
